Mazurek – shortcrust tart baked at Easter

  • Cake:
  • 200g dark chocolate (cocoa content min. 75%)
  • 50g butter
  • 7 eggs
  • 45g sugar
  • Mass:
  • 200g cream 30%
  • 1.5 teaspoons of honey
  • 200g dark chocolate (cocoa content min. 75%)
  • 20g butter
  • 25g spirit
  • Additionally:
  • jam with blueberry or black currant
  • nuts or pistachios to decorate
Butter and chocolate melt and cool slightly.
Proteins beat stiff gradually adding sugar.
To foam add the egg yolks and gradually pour the melted chocolate and butter - gently but thoroughly.
Evenly spread on a large baking tray (40 x 35cm) lined with parchment paper.

Bake at 180C (hot air) for 12 min.

Let cool and cut into 4 equal parts.

Boil the cream with honey, add the crushed chocolate - melt.
Add the butter and alcohol - mix to fully combine the ingredients.
Put mass away until slightly solidified - should not have the consistency of thick pudding.

The first part of the dough spread with jam currant, place on the second cake, coat them and cover the third part of the cake, which impose another layer of  and cover with last cake layer.

Refrigerate for concentration.

Heat the mass and decorate the top of Mazurek with it and nuts.
