Sour soup

  • 1 little onion
  • 2 garlic cloves
  • 1 tablespoon of clarified butter
  • 200g raw bacon
  • 2 carrots
  • 1 parsley
  • a piece of celery
  • a piece of leek
  • 1 twig of celery
  • water (about 1500-1700g)
  • 400g of sour soup leaven
  • 2 bay leaves
  • 3 grains of allspice
  • 2 teaspoons of Vegeta
  • a pinch of salt [if you use boughten Vegeta, do not add salt - Vegeta is salty]
  • 1 cube of vegetable broth
  • 1.5 teaspoons of pepper
  • 2 dried mushrooms (soaked)
  • 60g 30% cream

Finely chop onion and garlic - rinse on clarified butter.
Slice the bacon into a small dice and drizzle in a frying pan (without using oil).
Put the onion, garlic, bacon, spices and mushrooms in the pot.
Cut the vegetables into small pieces, put them into a basket that you can put into the pot [we only need decoction from vegetables, they will not be served with the soup]
Fill with water - cook about 25 min. at 90 C.
Take out a basket of vegetables, add leaven - cook about 10 min.
Season with the cream 1 min before the end of cooking.
Serve in bread.
