Vegetable spice (Vegeta)

Ingredients [you will get about 350g of spice from listed ingredients]:
  • 1.5 kg carrot
  • 300g celery
  • 350g parsley
  • 150g white side of the leek
  • 1 teaspoon pepper
  • bunch of parsley leafs
  • bunch of dill
  • bunch of lovage
  • 15g of dried mushrooms
  • 1.5 teaspoon black pepper seeds
  • 1 teaspoon allspice seeds
  • 4 teaspoons sea salt
  • 4 teaspoons turmeric

Wash, peel and cut vegetables into small pieces, chop herbs.
Arrange thin layer of vegetables and herbs on parchment.
During the summer the best way is to dry in the open air in the shade; when the weather is not conducive you can use special dryer for vegetables or oven.
My Vegeta this time dried up by the repealed oven (4 plaques inserted simultaneously) at a temperature of 50C (hot air).
We dry until the vegetables are completely dry, you should occasionally stir [Length of drying depends on the amount of water in the vegetables - for me this time the process took 10 hours].
Ground mushrooms, pepper, allspice and salt to a powder.
Add dried vegetables.
Mix with turmeric.
Store in an airtight jar.
