Chicken in coconut sauce

 
Ingredients:
  • 300g chicken breast
  • oil
  • 1 onion
  • 1 garlic clove
  • 1/2 teaspoon of powdered ginger
  • 1/2 teaspoon of chilli powder
  • 1 level teaspoon of curry
  • 200g canned tomatoes
  • 1 carrot
  • 200g coconut milk
  • salt
  • pepper
 
Onion cut into feathers and garlic in small cubes - fry in a little oil.
 
Add the spices (ginger, chilli, curry) - mix.
 
Add tomatoes (with sauce) -stew for a moment.
 
The meat cut into strips - toss into the pan, simmer for approx. 5 minutes.
 
Add the carrots, cut into thin bars - simmer approx. 7 - 10min. (Carrots should be crisp but not raw)
 
Add the coconut milk - mix, season with a little salt and pepper.
 
Serve immediately after preparation.
