Roll up the dough to a thickness of 3 mm, cut out discs of about 10cm diameter.
Insert the discs into the molds (12 large molds, one mold for each disc).
Mix milk, cream, sugar, flour and yolks.
Add cinnamon stick and lemon peel, cook pudding constantly stirring [18min].
Preheat the oven to 200C.
Pull out the stick and peel, pour the pudding into the molds without filling to the edges.
Bake in pre-heated oven for 25-30min. Until the cream gets firm consistency and blushes from the top.
